🥰 Ingredients:
3-4 pounds beef roast (such as chuck or sirloin)
4-5 large potatoes, peeled and quartered
4 carrots, peeled and cut into chunks
1 onion, chopped
4 cloves garlic, minced
2 cups beef broth
1 cup red wine (optional)
2 sprigs fresh rosemary (or 1 teaspoon dried rosemary)
2 sprigs fresh thyme (or 1 teaspoon dried thyme)
Salt and black pepper to taste
2 tablespoons vegetable oil
🥰 Instructions:
Preheat your oven to 325°F (163°C).
Season the beef roast generously with salt and black pepper.
Heat the vegetable oil in a large oven-safe pot or Dutch oven over medium-high heat. Brown the beef roast on all sides until it forms a rich, golden crust. Remove the roast from the pot and set it aside.
In the same pot, add the chopped onion and minced garlic. Sauté for a few minutes until they become fragrant and translucent.
Return the beef roast to the pot and add the potatoes and carrots around it.
Pour in the beef broth and red wine (if using). The liquid should partially cover the roast and vegetables.
Add the fresh rosemary and thyme sprigs (or dried herbs) for flavor.
Cover the pot with a lid or aluminum foil and place it in the preheated oven.
Roast for about 3-4 hours or until the beef is tender and easily shreds with a fork. You can baste the roast with the cooking juices occasionally for added flavor.
Once done, remove the pot from the oven and let it rest for a few minutes before slicing the beef roast.
