Delicious spanakopita

Ingredients:

1 egg

125 ml (1/2 cup) milk

125 ml (1/2 cup) vegetable oil

2 teaspoons water

1 teaspoon salt

Spinach and feta cheese mixture (seasoned with salt and pepper)

3 rolls of filo dough

1 egg yolk

Poppy seeds (optional)

Method:

Prepare the Egg Mixture: In a bowl, whisk together 1 egg with milk, vegetable oil, water, and salt.

Layer Filo Dough: Place a sheet of filo dough on a flat surface. Lightly brush it with the egg mixture. Repeat for a total of three layers.

Prepare Filling: Combine feta cheese with cooked spinach, seasoned with salt and pepper to taste.

Assemble: Spread the spinach and feta mixture over the layered filo. Roll the dough from one end to create a long strip.

Cut and Arrange: Cut the roll into triangle shapes and place them on a baking sheet.

Brush with Egg Yolk: Coat each triangle with egg yolk for a golden appearance.

Add Seeds: Optionally, sprinkle poppy seeds on top for extra crunch.

Bake: Cook in a preheated oven at 180°C (356°F) for about 15 minutes, or until golden brown.
